Holistic Recipes - Kapha Stewed Apples
If you're Kapha constitution you're probably drawn to sweet foods, and a great way to balance these cravings is to include some fruits in your diet but not too many.  Apples are a great as they contain lots of polyphenols loved by our gut microbiota and cooking them brings additional benefits more easily releasing their pectins.
Ayurveda teachings advise cooking apples before eating them and the science backs this up.
This recipe is so simple you can whip it up quickly and even make a whole batch of it to add to your porridge in the morning.
Kapha Stewed Apples
1 peeled, cored and diced apple (choose whichever apple variety you like) organic is best, but not essential.  I like a good pink lady, has the right amount of tartness and holds it's shape well.
1 star anise
1 cinnamon stick or 1tsp of ground cinnamon
A splash of water
Pop everything into a pan, cover and heat on a medium flame for around 12-15 minutes or until the apple pieces are soft and you can smell the aromatic spices.  If you find the apples drying out then just add in a splash of water.
Serving suggestion
I like having my stewed apples with some porridge made with a nut milk.  But, they taste equally great on their own with a dollop of coconut yoghurt. Just don't forget to heat them if you make them in advance for the week before eating them.
Nut milk is best served with fruit as Ayurvedic cooking advises against mixing fruit with dairy so try using a dairy-free milk.
